Mashed Potato Waffles

Intro
This was born from days of recipe creation in our test kitchen, and a batch of leftover mashed potatoes. Forever grateful for the idea to put them in a waffle iron! For this recipe you can make the potatoes from scratch or simply use leftover potatoes.

Ingredients

2 large eggs

3 tablespoons milk

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

2 teaspoons Bacon Glaze

or Ham Glaze

4 cups left over mashed potatoes or mashed sweet

Directions

1. Preheat and grease a waffle iron.

2. In a large bowl whisk the eggs and milk, until frothy.

3. Gently fold in the flour, baking powder, baking soda and Bacon or Ham Glaze until just combined. Then fold in the mashed potatoes.

4. Add 1/4 -1/3 cup of batter into the waffle iron. Cook until golden brown. Serve hot with maple syrup.

Substitutions
Recipe Tip:
Add more milk, a tablespoon at a time if your batter is too thick
