Lamb Burger

Intro
Lamb burgers are reminiscent of a spit grilled Greek gyro. The addition of herbs and spices packs these burgers with flavor. Serve these on toasted brioche buns slathered with tzatziki, and topped with pickled red onions. Delicious!

Ingredients

3 tablespoons olive oil

1/2 cup onion, minced

24 ounces ground lamb

4 teaspoons Dijon mustard

3 cloves garlic, minced

2 teaspoons Dill

2 teaspoons Mediterranean Oregano

1 teaspoon Coriander, Ground

1 teaspoon Cumin

Salt and Pepper to taste

4 brioche buns

1 container your favorite tzatziki

Pickled Red Onions

Directions

1. In a skillet over medium heat, add the oil and onion. Cook until just browned, about 5 minutes. Transfer to a large mixing bowl to cool, about 10 minutes.

2. Once the onions are cool add the lamb, Dijon mustard, garlic, Dill, Mediterranean Oregano, Ground Coriander, Cumin, and salt and pepper to taste. Form into four patties.

3. Prepare skillet to medium high or grill to medium-high heat. Grill burgers for 5 minutes on each side or until well browned. For medium cooked burgers, internal temperature should reach 145ºF.

4. Serve on toasted buns with your favorite tzatziki and pickled red onions.

Substitutions
Recipe Tip:
If you are not a fan of lamb swap beef or chicken, but if you can swing it, I would try the lamb. It’s fun to switch up the everyday burger.
