1/3 cup milk
1 pkg. corn muffin mix (8.5oz)
1 - 8.5oz can creamy corn
1/4 cup green onions, chopped
1 tablespoon Jalapeno Pepper Flakes
1. Preheat oven to 400°F. Grease a muffin pan or line with paper liners. Set aside.
2. In a large bowl whisk the egg and the milk. Add the corn muffin mix, creamy corn, cheese, green onions, and Jalapeño Pepper Flakes. Mix until just blended.
3. Spoon the batter mixture into the prepared pan.
4. Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean
