2 cups quinoa, cooked
1 red bell pepper, diced
1 apple, cored and diced
1/2 cup brussels sprouts, trimmed, shredded
1/2 cup pomegranate seeds
3 scallions, diced
2 tablespoons Ginger Citrus Seasoning
2 tablespoons champagne vinegar
2 tablespoons orange juice
1/2 teaspoon salt
2 tablespoon extra virgin olive oil
1. In a large bowl combine the quinoa, red pepper, apple, brussels sprouts, pomegranate seeds, and scallions.
2. In a glass jar with a lid or a small mixing bowl, combine the GInger Citrus Seasoning, vinegar, juice, salt, and olive oil. Seal and shake to combine. Pour over quinoa salad and toss to coat.
3. Serve warm or cold.
