2 tablespoons olive oil
1 1/2 pounds chicken breast, 1 inch cubes
4 tablespoons, divided Smoky Paprika Chipotle Seasoning
4 cups cooked rice
1 - 14.5 oz can diced tomatoes
1 - 5.5 oz can black beans, drained and rinsed
1 cup corn kernels
1 cup shredded cheese
Optional garnishes- green onions, sour cream, lime wedges, hot sauce
1. In a large skillet over medium-high heat add the oil, chicken and 3 tablespoons of Smoky Paprika Chipotle Seasoning. Sauté for 5-7 minutes, stirring occasionally, until chicken is cooked or reaches an internal temperature of 160ºF.
2. Stir in the rice, tomatoes, black beans, corn and remaining 1 tablespoon Smoky Paprika Chipotle. Cook for 4 minutes until heated through, stirring occasionally.
3. Top with cheese and cover the pan for 1 minute.
4. Garnish with desired toppings.
