2 teaspoons Curry Seasoning
½ cup plain yogurt
1 tablespoon apple jelly
1 tablespoon brown sugar
2 limes, 1 juiced, 1 cut into wedges
salt to taste
1 pound sea scallops
1 tablespoons olive oil
1. Mix together the first 5 ingredients. Season with salt to taste.
2. Heat a skillet over high heat (we prefer our seasoned cast iron). Add oil. When just smoking, add the scallops and sear each side for 2-3 minutes or until brown. Scallops are cooked when the tops split and turn from white to opaque.
3. Serve scallops with curry sauce and a lime wedge.
