1/4 teaspoon Cinnamon

1 teaspoon Coriander, Ground

1/2 teaspoon Cumin

1/2 teaspoon Thyme

1 teaspoon Turmeric

4 - 6 ounce salmon fillets, with skin

1/2 teaspoon salt

4 lemon wedges

1. Preheat oven to 400ºF.

2. In a large oven-safe skillet over medium-low heat add the Cinnamon, Coriander, Cumin Ground Coriander, Thyme, Turmeric, black pepper, and ground cloves. Toast while stirring frequently until fragrant, about 2 minutes. Transfer to a shallow bowl.

3. Lightly salt the salmon fillets, then dredge flesh side into spice mixture.

4. Heat oil in the same skillet over medium-high heat. Add seasoned fillets, skin side up - cook for 4 minutes or until flesh is golden. Flip fish and transfer to the oven.

Recipe Tip:
I prefer salmon to be cooked to just medium which is 125ºF on a digital thermometer.
