1 tablespoon canola oil
1/4 cup onion, finely diced
1 jalapeno pepper, finely diced
3 tablespoons Smoky Paprika Chipotle Seasoning
12 ounces white american cheese, shredded
4 ounces Monterey Jack cheese, shredded
1/2 cup heavy cream
2 roma tomatoes, seeded and diced
1/2 cup cilantro, chopped
1. In saucepan over medium-low heat add the oil. Add the onion, jalapeno pepper and Smoky Paprika Chipotle seasoning. Cook until the onions are translucent, about 4 minutes.
2. Stir in the cheeses and half of the cream. Stir until melted.
3. Add in the tomatoes, cilantro and the remaining cream. Add more cream if needed to reach your preferred consistency. Serve warm with tortilla chips.
