Smoky Paprika Chipotle Queso

Intro
A smoky, cheesy and saucy queso was a true challenge. Our test kitchen made dozens of iterations and finally ended up with a recipe that is absolutely fabulous. It is smooth,sumptuous and spicy, and holds up well on a tortilla chip - all the characteristics that we look for in great queso. Enjoy!

Ingredients

1 tablespoon canola oil

1/4 cup onion, finely diced

1 jalapeno pepper, finely diced

3 tablespoons Smoky Paprika Chipotle Seasoning

12 ounces white american cheese, shredded

4 ounces Monterey Jack cheese, shredded

1/2 cup heavy cream

2 roma tomatoes, seeded and diced

1/2 cup cilantro, chopped

Tortilla chips

Directions

1. In saucepan over medium-low heat add the oil. Add the onion, jalapeno pepper and Smoky Paprika Chipotle seasoning. Cook until the onions are translucent, about 4 minutes.

2. Stir in the cheeses and half of the cream. Stir until melted.

3. Add in the tomatoes, cilantro and the remaining cream. Add more cream if needed to reach your preferred consistency. Serve warm with tortilla chips.

Substitutions
Recipe Tip:
Do not use pre-shredded cheese - it contains cellulose, which prevents the cheese from clumping but also prevents you achieving queso greatness!
