Slow Roasted Sicilian Tomatoes

Intro
Sicilian is my absolute favorite seasoning blend. Added to tomatoes and slow roasted, these are simply irresistible.

Ingredients

2 pounds roma tomatoes, seeded and sliced in half

2 tablespoons olive oil

2 tablespoons Sicilian Seasoning

Directions

1. Preheat oven to 350°F.

2. Place the tomatoes cut side up on a sheet pan lined with parchment paper. Generously drizzle with olive oil, sprinkle with Sicilian seasoning. Season with salt and pepper to taste.

3. Bake for 1-2 hours depending on how crispy you would like them. Keep in an airtight container for 2 weeks.

Substitutions
Recipe Tip:
You can certainly use any other tomato you like – cherry, grape, etc. I like using Roma tomatoes because they are so easy to seed and have a great meatiness.
