1/2 package puff pastry, thawed
1 pint ricotta cheese
1 cup Parmesan cheese, grated + more for serving
3 eggs, lightly beaten
1 teaspoon lemon zest
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Zesty Lemon Herb
1 bunch of asparagus, washed, ends trimmed
1. Preheat oven to 400°F.
2. Place puff pastry on a rimmed baking sheet with parchment paper or silicone mat.
3. Create a 1 inch border by scoring the edge with a paring knife. Dock the center area of the pastry by poking holes with a fork.
4. In a mixing bowl combine the ricotta and Parmesan cheeses, eggs, zest, salt, black pepper and Zesty Lemon Herb. Spread the mixture evenly onto the dough and top with asparagus.
5. Bake for 25 minutes or until pastry is golden brown and asparagus is roasted. Serve warm or room temperature with more Parmesan cheese.
