Melting Potatoes

Intro
These potatoes are crispy on the outside, silky inside and totally addictive. The lemon juices and garlic marries with the Mediterranean seasoning creating a sensational side dish.
Melting Potatoes should be called disappearing potatoes.

Ingredients

1 1/2 pounds baby potatoes

1 teaspoon kosher salt

4 tablespoons butter, melted

1 tablespoon Mediterranean Seasoning

1 cup broth, chicken or vegetable

1 tablespoon lemon juice

2 garlic slices, peeled and crushed

Directions

1. Preheat oven to 500°F.

2. In a large bowl toss together the potatoes, salt, butter and Mediterranean Seasoning. Arrange on a rimmed baking sheet in a single layer.

3. Bake on the middle rack for 10-15 minutes. Flip potatoes and bake for 10-15 minutes or until golden brown.

4. Flip potatoes again, pour in the broth, lemon juice and garlic. Roast for 10 minutes. Serve hot.

This recipe is also delicious when made with Herbes de Provence.
