Ginger Citrus Wheat Berry Salad

Wheat berries have shot into foodie fame these past couple of years. It’s funny how the old things always become new again. Wheat berries are whole wheat kernels that have had their husks removed. They’re a powerhouse of nutrition and fiber. With the addition of sweet tomatoes, creamy cannellini beans, briny feta, and tart scallions tossed with a Ginger Citrus vinaigrette, this is a season-less salad that is not only healthy but hearty.

Ingredients

2 cups wheat berries

2 tablespoons lemon juice

2 tablespoons white vine, white or cider vinegar

2 teaspoons Dijon mustard

1 tablespoon honey

1/2 cup extra virgin olive oil

1 tablespoon Ginger Citrus Seasoning

2 shallots, minced

1/2 cup grape or cherry tomatoes, halved

1 - 15 ounce can white beans, drained and rinsed

1/2 cup scallions, finely chopped

1/2 cup feta cheese, crumbled

Directions

1. Bring a large pot of salted water to a boil. Stir in the wheat berries and cook for 10-12 minutes or until al dente. Drain. Cover for 10 minutes, allowing the wheat berries to steam.

2. In a large mixing bowl, combine the lemon juice, vinegar, Dijon mustard, honey, olive oil, and Ginger Citrus.

3. Add in the shallots, wheat berries, tomatoes, beans, scallions and feta cheese. Season to taste with salt and pepper. Serve or chill until ready to serve.

Substitutions
Recipe Tip:
If you cannot find wheat berries, try farro, barley (not quick cook), or freekeh.
