1 tablespoon + 2 teaspoons Ginger Citrus Seasoning
4 boneless chicken breasts (4 oz each)
1 tablespoon + 1/4 cup olive oil
1 teaspoon honey
1/2 cup white white or champagne vinegar
2 heads of your favorite lettuce, washed
2 large tomatoes, sliced
2 avocados, halved, and sliced
1 cucumber, quartered and sliced
1. Prepare grill or grill pan to 400ºF.
2. Brush each chicken breast with olive oil and sprinkle with 1 tablespoon Ginger Citrus seasoning.
2. Grill chicken for 5 -7 minutes per side, or until the internal temperature reaches 160ºF. Let chicken rest 10 minutes before slicing.
3, Meanwhile make the dressing. In a glass jar with a lid add 2 teaspoons Ginger Citrus seasoning, 1 honey, vinegar and 1/4 cup olive oil. Seal and shake combine.
4. Divide the lettuce, tomato, avocado, and cucumber between 4 plates. Top with chicken and a drizzle of vinaigrette.
