Four Pepper Crusted Goat Cheese

Semi- homemade and ready in literally seconds, I keep goat cheese in the frig at all times, just for this recipe.
Pepper crusted goat cheese with a spring of thyme.

Ingredients

1-2 tablespoons Pepper Mill Mix

1 - 4 oz goat cheese log

1 tablespoon extra virgin olive oil or honey (optional)

Directions

1. Use your food processor or spice grinder to grind 1-2 tablespoons of Pepper Mill Mix. Peppercorns should still be coarse, but not whole.

2. Spread the pepper onto a cutting board and roll the goat cheese into pepper.

3. If using, drizzle with extra virgin olive oil or honey. Serve with crackers.

Substitutions
Recipe Tip:
A cheese board needs hard, soft and bleu cheeses along with fruit, crackers, breads and a smear- honey, quince or fig jam are my favorites.
