Cucumber Avocado Salad

This salad is both gluten and dairy free, vegetarian and takes all of 5 minutes to make. Warning - this salad is highly addictive.
Cucumber Avocado salad with lots of hot sauce.

Ingredients

3/4 pound seedless cucumber, cut into 1/2 inch pieces

2 scallions, thinly sliced

1 avocado, pitted and diced

2 tablespoons mayonnaise

1 tablespoon lime juice

1 tablespoon No Salt Lemon Pepper Seasoning

Hot sauce to taste

Directions

1. In a large bowl combine the cucumber, scallions and avocado.

2. In a small bowl whisk together the mayo, lime juice, and No Salt Lemon Pepper.

3. Drizzle with hot sauce if using. Garnish with cilantro.
